
You will Need
- 2 1/2 cups of self rising
- ½ cup of powdered baking cocoa
- 2 cups sugar
- 1 teaspoon each of baking soda and baking powder
- ½ cup butter
- 5 eggs
- 1 teaspoon vanilla essence
- 1 cup buttermilk (If you not have buttermilk, you can replace it with a simple substitution – 1 cup of milk and a tablespoon of lemon juice or white vinegar)
- 1 teaspoon of red food coloring.
Now in a large mixing bowl put together the self rising flour, cocoa, baking powder and baking soda. Sift and mix them well in the bowl and set aside. Now, separately, cream together the sugar and butter till the mix is fluffy and light in texture. To this mix, add the eggs one at a time. Keep mixing the eggs into the mix as you add each one. Now add the sifted dry ingredients to this creamed mixture along with the buttermilk, vanilla and food coloring.
Fill the cupcake pans with the red batter and bake them in for around 20 minutes. Ensure that the inserted toothpick comes out clean. Cool the birthday extravaganza and then frost.
